June 2, 2023 Chautauqua

Beth's Ponderings

    May was mainly spent harvesting dandelions.  I made 9 pints of soup broth, many cups of juice (the trick is more blossoms than greens and add a splash of lemon juice), and dried some for teas (I have to find another way to dry the blossoms as they just turned to the white puffball!).  I remarked to someone that my garden was FULL of food and it wasn’t even planted yet!  No way would I ever starve with the dandelions all over!  After pulling the ones I couldn’t save (too old), I planted my garden.  Hopefully it’s as bountiful.
